Easy Guide to 7 Cap Classique Sweetness Levels

There are seven Cap Classique sweetness levels ranging from bone dry “brut nature” to nectar sweet “doux”. Sweetness is measured by the residual sugar left in the sparkling wine after fermentation. Residual sugar (or RS) is typically measured in grams per litre (g/l).

Brut nature is also called zero dosage or brut zero and is the driest style of bubbly – with less than 3 grams of sugar per litre. Calories: 0 – 2 per 150ml.

extra brut

Extra brut is also one of the driest forms of bubbly – less than 6 grams of sugar per litre. Calories: 0 – 5 per 150ml.

Brut means dry in French, and is a style of bubbly that is very low in sugar – less than 12 grams of sugar per litre. Calories: 5 – 7 per 150ml.

Extra sec (extra dry) is right in the middle of the sweetness scale of bubbly. Extra dry is a style of bubbly that is confusingly less dry and sweeter than brut – between 12 – 17 grams of sugar per litre. Calories: 7 – 10 per 150ml.

Sec means dry in French, and is a style of bubbly that is medium-dry – between 17 – 32 grams of sugar per litre. Calories: 10 – 20 per 150ml.

Demi means half dry in French and is a style of bubbly that is medium-sweet – between 32 – 50 grams of sugar per litre. Calories: 20 – 30 per 150ml.
